Meal Planning: March 31st – April 6th

Thank goodness it is Friday! I am so beyond ready for the weekend. What a week it has been. Although it will be a busy weekend, it will also be a good one. On top of Seattle having awesome weather (well that is what they are saying), tomorrow the misters parents are coming to town and then tomorrow evening, we are having a big dinner with some families he grew up with. Every year on the Saturday before Easter the families get together for a dinner. It is such a fun tradition. Then Sunday, we have church followed by lunch/dinner at my parents. It will be a big celebration this year as we have 20 or so people coming together. And on top of celebrating Easter, we will also be celebrating my cousin’s sons birthday! Now, only to get through the rest of the work day so the weekend can start ๐Ÿ™‚

This weeks meals were a success! I LOVED the two meals I made from Skinnytaste (honey sesame chicken and pork and green chili stew). Also, the Sweet Kale Salad from Costco is awesome. I will definitely be buying it again (assuming they have it still).

Sunday: Easter lunch/dinner at my parents (I am in charge of making two pasta style salads, I am thinking a Farro Caprese Salad and an Italian Orzo Salad)

Tuesday: Crock Pot Picadillo (Skinnytaste)

Wednesday: Greek Style Shrimp with Feta (from Dinner: A Love Story Cookbook)

Thursday: Leftovers / Out

Friday: Dinner at the Ingle’s!

Saturday: Out

Meal Planning: March 24th – March 30th

The last three weeks have been a little crazy and as a result, I have not been meal planning (or blogging). The last time I attempted was the week of March 3rd and that weeks meals were very different than planned. Instead of cooking all the planned meals, I only did two and then we tackled the leftovers and miscellaneous stuff in the fridge the rest of the week. One thing I am learning during this meal planning process is that we end up having a lot more leftovers than we can keep up with eating ๐Ÿ™‚ So for the next few weeks, I am going to plan only 3 meals (maybe 3 for sure and have one back-up in mind) and see how that goes.

Weekly Meals: March 24th – March 30th

Sunday: Out (Brier Pizza with the folks)

Monday: Sweet Kale Salad (salad mix from Costco)

Tuesday: Crock-pot Sesame Honey Chicken (from Skinnytaste) with Cauliflower “Rice”

ย Wednesday: Leftovers

Thursday: Crock-pot Pork and Green Chili Stew (from Skinnytaste)

Friday: Out / Leftovers (or back-up: Greek Style Shrimp with Feta (from Dinner: A Love Story Cookbook))

Saturday: Out – Cactus (The Pieper’s are in town so we have a big dinner with long time family friends that evening)

Once again I have fallen behind on posting meals and updates ๐Ÿ™‚ Here are a few things that have been going on the last two weekends:

Two weekends ago, the hubby and I spent 3 nights in Vegas. We had a great time! It was during the Pac 12 tournament so we went to see the Huskies play. The weather was also AWESOME so we got in some quality pool time. We stayed at the MGM Signature. Overall I liked the hotel but it was a little bit of a walk to get to the Casino of MGM and to the Strip. A few co-workers were also there so we went out with them a bit. And, on our last day, Josh and Kylin came down so we spent the day exploring with them!

This past weekend, on Friday we had a few friends over for games to celebrate our friend Aur’s birthday. It was a great evening. Played a game kinda like Apples to Apples (was called cards against humanity) and it was hilarious! Then on Saturday the Mr. golfed while I did a bunch of errands and that evening we had a date. We went to dinner at Fonte and then to the symphony. Was a nice evening. Sadly, I did doze off during the symphony…hard not too…it is so relaxing. On Sunday, we went to church and then met my parents for wine tasting and lunch. Wine tasting went longer than planned, so we ended up also doing dinner with them ๐Ÿ™‚

Not much else new that I can think of! I promise to share a recipe soon. I do have a few good ones that I really need to share with you! Hope you are well!

Meal Planning: March 3rd – March 9th

Overall this last weeks meals went OK. On Wednesday I really didn’t feel like cooking so instead I made nachos (I just wanted something easy..not health, but sure tasted good!). As a result, I delayed the Skillet Eggplant Parmigiano and made it last night and totally postponed the Turkish Eggplant and Farro until this coming week (still have 2 eggplants I need to use!!!).

This coming week will be the week of the crock-pot. I have a goal to clean out some stuff from our freezer (as usual out of control). And, what better way than to cook it in the crock-pot!

Friday: Out (Dinner at the Ingle’s! I am in charge of dessert, still searching for something to make. So looking forward to the Chicken Saltimboca Jessica is planning to make!)

Saturday: Out / Pesto Pasta Salad / Leftovers – will have to see what we end up doing that day…may not be around to cook ๐Ÿ™‚

Meal Planning: February 24th – March 2nd

Another great and busy weekend in our house ๐Ÿ™‚ Here is a quick recap. Once again I failed at taking pictures to actually share.

Thursday evening we had Megan and her boyfriend Denny over for dinner. Super fun evening. Can’t wait to schedule another dinner with them sometime soon. As mentioned in last weeks meal planning post, I made Oven Chicken Fajitas. Overall, I think the recipe turned out great. Super easy, totally a meal you can prep ahead of time and really tasty. The only thing wrong with it…I think I cooked it a little too long. The chicken was a little dry ๐Ÿ˜ฆ Next time I will keep a closer eye on it. Or, I may try it in the crock-pot.

On Friday, I was able to leave a little early so the Mr. picked me up from the office and we made a quick Costco run before heading home. We have decided that Friday evenings are the BEST time to go. Way fewer people so you can get in and out pretty quickly (unless you get caught going up and down every aisle like I love to do). After unloading/unpacking and resting for a few minutes, the Mr. and I headed out to meet up with our brother & sister-in-law for dinner and drinks. We had a coupon (surprising I know) to use at Grub. Grub is a relatively new (I think) restaurant on the top of Queen Anne. Overall we enjoyed the meal. Wine pours were good (very important) and the food was pretty tasty. They did run out of a few things so it made the menu a little small (and one of them was an item the Mr. had wanted to order for dinner so that was disappointing). After dinner, we decided to grab a beer at Hilltop Ale House and continue visiting (lots to catch up on as Josh had been gone for the last month).

On Saturday morning, the hubby went golfing while I ran a few errands. I then met him and my dad at the club for a quick-lunch. Afterwards, the Mr. and I then headed north for an overnight trip with a group of friends (our game night crew) to my friend Morgan’s family beach home up in Camano Island. It was such a relaxing getaway! We played a few games, had delicious food (way too much of it!), chatted, took a walk on the beach, etc. Was so nice to get away even if it was only for a night.

Sunday evening my friend Brooke hosted an Oscars party. Was good to see her new home and spend time with a few girlfriends I don’t get to see often enough!

Last weeks meals were a success. My favorite (and by far the easiest) was the Portobello Mushroom Pizza’s. I for sure need to share that one. Didn’t get to cook the flank steak as we ended up going out. And the Tuna and Farro salad was good but a little dry. I will need to mess with it a little next time to perfect it. Here are this weeks plans.

Saturday: Out (will be at the Sounders game…guessing we will get happy hour before)

Saturday: Heading North to a friends cabin for the night. She is making Lasagna or Baked Ziti. I am in charge of a Salad and Appetizer….not sure what I will make yet ๐Ÿ™‚

Meal Planning: February 10th – February 16th

What a nice weekend this last one was. Quick recap: On Friday night, the Mr. and I went up north to my good friends daughters 3rd birthday party. So nice to see her, the family and other friends. After the party, we met up with my parents for a late dinner at one of my favorite restaurants, Brier Pizza. Love that place! Saturday morning,we hung around the house and took Leo to the dog park. Then I met up with my good friends Morgan, Becca and Amanda (and Baby Kate) for lunch and a walk around Greenlake. Always good spending time with my XO ladies. On Saturday evening we just hung around the house. The hubby’s buddy Burger stopped by for a visit and had dinner with us as his wife was hosting a girls dinner ๐Ÿ™‚ On Sunday, the Mr. went golfing in the morning, while I hung at the house and ran errands. Then, in the afternoon, we headed over to my aunt and uncle’s house for a wonderful evening with family celebrating 5 birthdays!

Sunday: Family Birthday Celebration – I was in charge of an appetizer so I made Walnut Tacos (a must try)

Meal Planning: February 3rd – February 9th

I am so, so, so far behind on posting about meals I have made lately. I have plenty of good ones to share (especially since I have been meal planning) but I just haven’t found the time to write-up the recipes I use and share pictures! I am amazed by those who can post daily. It is such a commitment. Maybe when work slows down and I am not so tired at night ๐Ÿ™‚

Here are this weeks meals. Looking forward to them. Been wanting to try these recipes for a while!

Weekly Meals: February 3rd – February 9th

Sunday: Superbowl Party (lots of finger foods) – I made Chicken Curry Wontons (always a crowd pleaser)

Monday: Chicken Chickpea Chopped Salad (Dinner) and Butternut Squash Soup with Apples (for rest of week lunches/leftovers)

Tuesday: Out to Tavern Law to Celebrate the hubby’s 31st Birthday!

Wednesday: Crock Pot Jambalaya (possibly cook on Saturday – depending if hubby has Poker night. If so I will make to feed the boys, if not save till later in the week as I am out with Megan on Wednesday)

Thursday: Baked Spaghetti Squash Chicken Parmesan (from Skinnytaste)

Friday: Out (will be up north celebrating Miss Campbell’s birthday)

Saturday: Leftovers (or Jambalaya)

This past weekend the hubby and I spent some quality time together ๐Ÿ™‚ We originally were supposed to be in Whistler with family/friends, however, that trip sadly had to get cancelled. Instead, I surprised (well kind of) the Mr. with an overnight trip on Friday to the Salish Lodge in Snoqualmie and then a massage and pedicure on Saturday! The Salish Lodge was awesome. We got there Friday evening and went to one of their restaurants (the Attic) for dinner. Then enjoyed wine and a fire in our room. Saturday morning we were super lazy and enjoyed reading in bed for several hours. Sadly we didn’t get to see the falls as it was SUPER foggy ๐Ÿ˜ฆ The Mr. had never had a massage or pedicure so as part of our adventure I booked us both at InSpa in Issaquah (had a few gift certificates from a wedding gift). I think he enjoyed it but not sure he thought it was worth the money! ๐Ÿ™‚ Oh well, I will continue to go and enjoy them.
