Meal Planning: October 13th – October 19th

Back to meal planning. Two months off is way too long! But, with the way our schedule has been, I am not to sure how successful I would have been. This coming week will be a busy one. We are hosting three dinners (Monday, Friday and Saturday) and bringing friends dinner on Thursday who just had a baby. Going to try a few crock pot recipes to help me get through this busy cooking week!

Weekly Meals: October 13th – October 19th

Sunday: Steak Soup

Monday: Crock Pot Honey Sesame Chicken with Rice and Asian Style Green Beans. For the appetizer I am going to make Baked Crab Wontons.

Tuesday: Leftovers

Wednesday: Out (I have Junior League…need to figure out a dessert…and the hubby has roommate night)

Thursday: Mexican Lasagna

Friday: Game night! I will be making Crock Pot Jambalayaย 

Saturday: Flank Steak with Quinoa Stuffed Sweet Potatoes and Balsamic-Glazed Brussels Sprouts

Meal Planning: June 9th – June 15th

Late to post again. Man, one of these days I will be on top of it! This week is promising to be one where I won’t get much of a chance to be in the kitchen. As a result, I am trying to have things that are super quick and easy and also use up stuff I have that needs to go and that uses a lot of produce as I went a little crazy on fresh produce this weekend ๐Ÿ™‚ Here is what we have planned:

Weekly Meals: June 9th – June 15th

Sunday: Out – Dinner at club after golf

Monday:ย Chinese Chicken Salad

Tuesday: Out – Use a Bloomspot Deal at Vios

Wednesday: Out (Mr has RMN and I am getting manipedis with Morgan!)

Thursday:ย Chicken Sausage, Peppers and Polenta with mixed green salad (didn’t end up making this last week so plan to make it tonight or at some point this week)

Friday:ย Smoked Salmon BLT with mixed green salad (didn’t end up making this one last week as I had leftover BBQ peach pulled pork which was DELICIOUS)

Meal Planning: June 2nd – June 8th

What a fun and busy weekend we had! On Friday night the Mr and I had a wonderful evening at Becca & Cam’s house. They got yummy Chinese take-out and then we played the LONGEST game of Settlers of Catan ๐Ÿ™‚

On Saturday morning, the Mr. woke up super early to golf and I actually slept in (ok, slept till 8am but for me that is late!). At 10am I met my good friend Tawnya, who was in town, for brunch at Blue Water in Greenlake and then afterwards I went straight to U Village to meet my “big sis” Pamela for some shopping, coffee and a late lunch. Later in the evening, the hubby and I headed over to our cousin-in-laws house for their sons first birthday celebration. To finish off the night, we stopped by a birthday party and then a farewell party for the East Side Pieps.

Sunday started off with a 2nd birthday party at the Playdate Cafe in Lynnwood for our friends daughter. Was so fun to see the kids run around having a great time. Then we headed to the club for lunch and a round of golf with my parents.

We will see how I do this week. It is a little tough to be sure I will get to these meals. Lots going on but hope to stick with the plan!

Meal Planning: May 26th – June 1st

I am still a little behind in getting my meal plans up before the week starts. This weeks excuse was it was Memorial Day weekend and we had family in town ๐Ÿ™‚

Quick weekend summary: It was a busy fun weekend with the hubby’s family. On Friday evening, we went on an electric boat. For two hours we cruised around Lake Union. Afterwards, we grabbed a happy hour dinner at Ivar’s Salmon House. I hadn’t been there since they finished remodeling. The bar area has definitely been improved. And, the food was way better than I remembered! Saturday we all headed over to Bainbridge Island for a day of exploring the downtown area and beer/whiskey/vodka/wine tasting! While there, we had a great lunch on the deck of The Harbour Public House. This spot had a great view all the way back to downtown Seattle. Saturday evening we had a pizza dinner in as we were all exhausted from our Island adventure. That night, the Mr and I sneaked away from the family to celebrate my good friend Morgan’s 30th birthday! On Sunday, we met for brunch at Serious Biscuit in South Lake Union (give it an ok rating) and then went to the Mariner’s game. That evening, the East Side Pieps grilled steaks for the family and we played a few games of Apple’s to Apple’s. Yesterday, the Mr. and I played golf (I only did 9 as I had plans with some girlfriends) and then had a quiet evening at home!

Here is a list of the meals I have planned for this week. Trying to keep it simple as I feel like our overall quiet week could change to be a busy one! Hope you are all well!

Monday: Spanish Spaghetti with Olives and green salad

Tuesday: Rice & Bean Bowl (Black Beans and rice with ground turkey, avocado, red onion, red peppers and cilantro)

Wednesday: Leftovers / Quick Creation (the Mr. has roommate night so I am on my own)

Thursday:ย Thai Peanut Soba Noodles (did not end up making this last week, so will this week as I have all the ingredients)

Friday: Out – Dinner with the Ochiltrees!

Saturday: Out – we have 3 birthday parties and a farewell party between 5pm and 10pm…goal is to make all ๐Ÿ™‚

Meal Planning: May 19th – May 25th

Back from vacation and definitely ready to start back up with the meal planning. We had a wonderful time in Maui! It was beyond relaxing. For the first few days we were with a group of friends to celebrate the wedding of Debbie and Peter. It was so fun spending 4 days with that group! Then we moved to Wailea and spent the next 6 days with my parents. Between golfing, pool, happy hour, etc. we had a blast! Can’t wait to go back (or for our next vacation).

It is nice to be home however. Especially when it comes to meals. Although we cooked in for breakfast, most nights we ate out. And when I eat out, I sure am tempted by stuff that isn’t good for me ๐Ÿ™‚ By the end of our 10 days, I was so ready to get back into our weekly meal routine!

So far, off to a good start (yes I know we are only 2 days it!). Here is what we have planned for this week. Can’t wait to share yesterday’s dinner…it was DELICIOUS and super easy!

Thursday:ย Thai Peanut Soba Noodles

Friday: Out – Picnic on an Electric Boat with the family

Saturday: Unknown – we have the hubby’s family in town so not sure if we will cook in or go out

Meal Planning: April 7th – April 13th

Another week has come and gone. I can’t say I was all that successful at following through on the meals that I planned last week. Between having leftovers from Easter and a few things going on preventing us (well me) from having time to cook, I only made one of the planned meals. Here is how our week ended up turning out:

Monday – the Mr. ended up going to a Mariners event at Safeco field so I was on my own. I ended up cooking myself up a leftover lamb burger from Easter.

Tuesday – I made us the Cauliflower Pizzas. As I was going through the steps of making I was a little nervous on how they would turn out but they ended up turning out AMAZING. Both the Mr. and I loved them. Promise to share recipe soon – this is a MUST TRY!

Wednesday – Absolutely can’t remember ๐Ÿ™‚ Probably just something random as I was on my own and the Mr. was at his weekly Wednesday roommate night.

Thursday – I had a Junior League introduction meeting so I didn’t get home until after 8pm. Ended up throwing together a quesadilla.

Friday – We had dinner at the Ingle’s. They made us excellent tacos! It was such a wonderful evening. Had so much fun catching up with them and playing with their son Ben.

Saturday – Went to a birthday party where they had the Skillet food truck – YUM – I had the farro burger and it was delicious.

Hopefully this week will be a little better. Overall, I have super easy meals planned and most items we already had so the grocery shopping was minimal. Trying to use up some stuff we already have!
