Meal Planning: May 26th – June 1st

I am still a little behind in getting my meal plans up before the week starts. This weeks excuse was it was Memorial Day weekend and we had family in town 🙂

Quick weekend summary: It was a busy fun weekend with the hubby’s family. On Friday evening, we went on an electric boat. For two hours we cruised around Lake Union. Afterwards, we grabbed a happy hour dinner at Ivar’s Salmon House. I hadn’t been there since they finished remodeling. The bar area has definitely been improved. And, the food was way better than I remembered! Saturday we all headed over to Bainbridge Island for a day of exploring the downtown area and beer/whiskey/vodka/wine tasting! While there, we had a great lunch on the deck of The Harbour Public House. This spot had a great view all the way back to downtown Seattle. Saturday evening we had a pizza dinner in as we were all exhausted from our Island adventure. That night, the Mr and I sneaked away from the family to celebrate my good friend Morgan’s 30th birthday! On Sunday, we met for brunch at Serious Biscuit in South Lake Union (give it an ok rating) and then went to the Mariner’s game. That evening, the East Side Pieps grilled steaks for the family and we played a few games of Apple’s to Apple’s. Yesterday, the Mr. and I played golf (I only did 9 as I had plans with some girlfriends) and then had a quiet evening at home!

Here is a list of the meals I have planned for this week. Trying to keep it simple as I feel like our overall quiet week could change to be a busy one! Hope you are all well!

Weekly Meals: May 26th – June 1st

Sunday: Out

Monday: Spanish Spaghetti with Olives and green salad

Tuesday: Rice & Bean Bowl (Black Beans and rice with ground turkey, avocado, red onion, red peppers and cilantro)

Wednesday: Leftovers / Quick Creation (the Mr. has roommate night so I am on my own)

Thursday: Thai Peanut Soba Noodles (did not end up making this last week, so will this week as I have all the ingredients)

Friday: Out – Dinner with the Ochiltrees!

Saturday: Out – we have 3 birthday parties and a farewell party between 5pm and 10pm…goal is to make all 🙂

Grilled Chicken with Lemon-Cucumber Relish

Chicken Dish 2On Monday night I made this delicious dish for dinner. It was a super easy and overall quick recipe! Both the Mr. and I enjoyed it. And, it was really good for lunch the next day! With it, I served a salad mix from Costco that I have purchased several times. It is the Sweet Kale Salad…pretty sure I have mentioned this before. Both the Mr. and I love it!

Grilled Chicken with Lemon-Cucumber Relish (from May 2013 Better Homes & Garden) – Serves 4

Ingredients:

  • 4 skinless, boneless chicken breast halves
  • 1 tablespoon olive oil
  • 2 teaspoons cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper
  • 1 medium cucumber, seeds removed and chopped
  • 1 large tomato, chopped
  • 1/4 cup finely chopped red onion
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1/3 cup nonfat plain Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon milk (I used almond milk)

Directions:

Brush chicken breast with olive oil. Sprinkle with cumin, salt and pepper. Either on the BBQ or on a grill pan on stove top, cover and grill on medium heat for 15 minutes or until done (mine took around 20 minutes but I had my stove on medium low so that I didn’t cook to fast and dry out).

Meanwhile, for Lemon-Cucumber relish, in a medium bowl combine cucumber, tomato, onion, lemon juice and garlic. Stir to combine. In a small bowl combine yogurt, honey and milk. Stir to combine.

To serve, top chicken with Lemon-Cucumber Relish. Drizzle with yogurt sauce.

Meal Planning: May 19th – May 25th

Back from vacation and definitely ready to start back up with the meal planning. We had a wonderful time in Maui! It was beyond relaxing. For the first few days we were with a group of friends to celebrate the wedding of Debbie and Peter. It was so fun spending 4 days with that group! Then we moved to Wailea and spent the next 6 days with my parents. Between golfing, pool, happy hour, etc. we had a blast! Can’t wait to go back (or for our next vacation).

It is nice to be home however. Especially when it comes to meals. Although we cooked in for breakfast, most nights we ate out. And when I eat out, I sure am tempted by stuff that isn’t good for me 🙂 By the end of our 10 days, I was so ready to get back into our weekly meal routine!

So far, off to a good start (yes I know we are only 2 days it!). Here is what we have planned for this week. Can’t wait to share yesterday’s dinner…it was DELICIOUS and super easy!

Saturday: Unknown – we have the hubby’s family in town so not sure if we will cook in or go out

Once again it has been waaaaaay too long since I have posted! I have such a backlog of recipes I tried and want to share. Promise after the Mr and my much needed vacation (also our 1 year anniversary trip!) I will get back to it. Both meal planning and recipe sharing. Until then I hope you are all well!!!
